Ingredients:
- 4 quails
- 1 cup basmati rice
- 1 onion
- 2 cloves garlic
- 2 tablespoons butter
- 1/2 cup chicken broth
- 1/4 cup raisins
- 1/4 cup sliced almonds
- 1 orange
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Olive oil
- Butter for greasing the pan
Instructions:
- Preparing the rice: Rinse the rice well and boil it in salted water, according to the instructions on the package. Add the raisins and sliced almonds in the last 5 minutes of cooking.
- Preparing the quails: Remove the bones from the quails, leaving the skin intact. Season the meat with salt and pepper inside and out. Fill each quail with the prepared rice.
- Cooking the quails: Preheat the oven to 180°C (350°F). Grease a pan with butter and place the quails. Add a little olive oil and bake for 30-35 minutes, or until the meat is tender.
- Preparing the sauce: In a pan, melt the butter. Add the chopped onion and garlic and sauté until softened. Grate the orange zest and squeeze the juice. Add the orange juice, soy sauce, honey, balsamic vinegar, salt, and pepper to taste. Let the sauce simmer until it reduces and thickens.
- Serving: Place the quails on plates and pour the orange sauce over them. You can serve with grilled vegetables or a green salad.
Tips:
- For a more intense flavor, you can add other spices to the filling, such as cinnamon or cardamom.
- If you want a crispier crust, you can brush the quails with honey before baking.
- For a more complex sauce, you can add a splash of red wine to the orange sauce.
